Ingredients you'll need

For the cream

  • 200g silken tofu
  • 4-5 tbsp water
  • 6 tbsp maple syrup
  • 2 tsp neutral oil
  • Pinch of vanilla (optional)
  • Juice and zest of 1/2 lemon.

For the pancakes

  • 100g flour
  • 1 1/2 tsp baking powder
  • 1-2 tbsp sugar
  • 170ml plant milk
  • 2 tsp vinegar.

For the coffee syrup

  • 1 espresso
  • 2 tbsp maple syrup.

For finishing

  • Cocoa powder for dusting

Let's get cookin'

  1. For cream: blend tofu, water, maple syrup, oil, vanilla, lemon juice and zest until smooth
  2. Refrigerate
  3. For pancakes: mix flour, baking powder, and sugar in a bowl
  4. Combine plant milk and vinegar, then add to dry ingredients
  5. Stir well
  6. Fry pancakes using 2 tbsp batter each until golden brown on both sides
  7. For coffee syrup: mix espresso with maple syrup
  8. Layer pancakes with coffee syrup and cream, dust with cocoa powder
