This little baking dream is not only incredibly moist and lemony-fresh, but also prepared in a flash. Imagine being able to enjoy a warm, fragrant cake anytime without having to bake an entire springform pan. Flour, baking powder, sugar, plant-based milk, olive oil, and lemon juice are mixed into a batter and baked in a snap. Then, while the cake is still warm, it's drenched in a glaze made from powdered sugar and lemon for an extra dose of freshness. A homemade frappé goes perfectly with it.
