Ingredients you'll need

  • 1 small onion
  • 3 cloves garlic
  • 2 chunks ginger
  • big handful dried mushrooms
  • 1l veg stock
  • 1 tsp each black pepper ground coriander
  • 1/4 tsp ground cloves
  • 2 whole tomatoes
  • 1 peeled onion whole
  • 180g peanut butter
  • 1 big tbsp tomato paste
  • 250ml water
  • salt
  • 400g mushrooms or tofu
  • lime juice
  • pinch sugar
  • rice
  • Let's get cookin'

    1. Finely mince onion, garlic, ginger. Add to pot with dried mushrooms, stock, spices, tomatoes, whole onion.
    2. Boil until tomato skin comes off, transfer tomatoes and onion to blender with stock. Blend.
    3. Add through sieve, back to pot, discard fibers
    4. Bring to light boil. Simmer.
    5. Blend peanut butter, tomato paste, water, salt, until smooth. Add to soup. Simmer 20mins
    6. Add mushrooms/tofu. Simmer 40mins more
    7. Optional: add lime juice and/or sugar at end
    8. Serve with rice.
