Ingredients you'll need

  • 1 clove garlic, minced
  • Oil for sautéing
  • Zest of 1/2 lemon
  • Juice of 1/2 lemon
  • 350ml hot vegetable stock
  • Salt to taste
  • 100g capellini (thin spaghetti)
  • Handful of fresh basil
  • 2 tbsp vegan cream
  • Vegan cashew parmesan for serving
  • Let's get cookin'

    1. Sauté minced garlic in oil until fragrant.
    2. Add lemon zest, lemon juice, hot vegetable stock, and salt to taste.
    3. Add capellini pasta, making sure it's submerged in the liquid.
    4. Cover and simmer for 3 minutes until pasta is cooked through.
    5. Add fresh basil and vegan cream.
    6. Stir everything until creamy and well combined.
    7. Serve immediately with vegan cashew parmesan.
