Ingredients you'll need

  • 1 onion
  • 2 cloves garlic
  • handful sun dried tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp paprika
  • 1 tbsp dried Italian herbs
  • salt
  • 500g vegan gnocchi
  • 1/2 cup (125ml) vegan cream
  • 1 cup (250ml) water
  • vegan parmesan
  • Let's get cookin'

    1. Chop and sauté onion, garlic and sun dried tomatoes in olive oil
    2. Add tomato paste, paprika, herbs and salt
    3. Add gnocchi, vegan cream and water
    4. Stir and simmer 5-10mins
    5. Serve with vegan parmesan.
