For the no-cook sauce

  • 2 small ripe tomatoes
  • cubed
  • 1 clove garlic
  • minced
  • Handful fresh basil or parsley
  • chopped
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • Salt to taste
  • Chili flakes to taste
  • 1 tbsp olive oil
  • Pinch of sugar

For the pasta

  • 100g pasta

For serving: Vegan parmesan

Let's get cookin'

  1. Cook pasta according to package instructions
  2. Meanwhile, combine cubed tomatoes, minced garlic, chopped herbs, lemon zest, lemon juice, salt, chili flakes, olive oil, and sugar
  3. Knead the mixture with your hands to release tomato juices
  4. Toss cooked pasta with tomato mixture and some pasta water
  5. Serve with vegan parmesan
