Ingredients you'll need

For the herb sauce

  • 75g vegan butter
  • 1 small onion
  • 2 cloves garlic
  • 1 tsp mustard
  • 1 tsp miso paste
  • 1/2 tsp curry powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • 1 tbsp chopped parsley
  • 150ml vegan cream
  • Juice of 1/2 lemon
  • 1 tsp agave.

For the mushroom steaks

  • 4 large mushrooms (lion's mane recommended)
  • 1/2 tbsp paprika
  • 1/2 tbsp cumin
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 1 tsp salt.

For the glaze

  • 2 tbsp tomato paste
  • 1/2 tbsp soy sauce
  • 1 tbsp agave

Let's get cookin'

  1. For sauce: sauté onion and garlic in vegan butter
  2. Add mustard, miso, curry powder, herbs, salt, pepper, and parsley
  3. Stir in cream, lemon juice, and agave
  4. Cook 5 minutes
  5. For steaks: fry mushrooms in oil, pressing out water gently
  6. Mix paprika, cumin, thyme, rosemary, and salt
  7. Sprinkle on both sides
  8. Mix tomato paste, soy sauce, and agave
  9. Brush on steaks
  10. Serve steaks with herb sauce and fries
