Underrated vegetables become a taste revelation

Leeks are often underestimated, but this preparation method makes them the star of the side dish. Searing them at high heat caramelizes the outer layers and imparts roasted flavors. The miso glaze is a flavor miracle: the fermented soybean paste adds umami, depth, and a slight saltiness. Combined with maple syrup, it creates a sweet and salty balance that complements the leeks perfectly. Lime juice and garlic round out the flavor profile and add freshness. Cooking under the lid makes the leeks buttery soft, while the glaze reduces. This side dish goes perfectly with rice and tofu, as well as other Asian-inspired dishes. In just 20 minutes, this often overlooked vegetable is transformed into a true delicacy.
