Ingredients you'll need

For the Crust:

  • 125g lotus cookies
  • 50g melted vegan butter

For the Cream:

  • 250g vegan cream cheese
  • 250g vegan Quark or Greek yogurt
  • 40g sugar
  • 1 tsp vanilla (sugar)
  • 50g Lotus spread
  • 2 packs whipped cream stiffener

For Decoration:

  • More lotus spread
  • Cookie crumbles

Let's get cookin'

  1. Crush the lotus cookies and mix with melted vegan butter.Press the cookie mixture into a lined 20cm baking dish
  2. Whip up the vegan cream cheese, vegan Quark/Greek yogurt, sugar, vanilla, Lotus spread, and whipped cream stiffener
  3. Fill the cream mixture into the baking dish over the crust. Refrigerate for 3-4 hours
  4. Melt additional lotus spread and spread on top of the cake. Decorate with more cookie crumbles
