For the zucchini

  • 1 zucchini
  • cut into large chunks
  • Salt for seasoning
  • Oil for cooking.

  • 1 tbsp vegan mayo
  • 1 tsp chili sauce
  • Salt to taste
  • Juice of 1/2 lime
  • 1 tsp maple syrup

Let's get cookin'

  1. Cut zucchini into large chunks
  2. Pan fry covered in oil on high heat, seasoning each side with salt
  3. Flip after 4-5 minutes and cover again to ensure thorough cooking
  4. For sauce: mix vegan mayo, chili sauce, salt, lime juice, and maple syrup
  5. Serve zucchini with sauce and garnish with cilantro
