Ingredients you'll need

  • 3 large zucchini
  • 3 cloves garlic minced
  • 2 tbsp vegan yogurt
  • 1/4 cup (60g) tahini
  • salt and pepper
  • juice of 1/2 lemon
  • 1 tsp cumin
  • Let's get cookin'

    1. Peel zucchini, chop into big chunks
    2. Fry in pan on medium-high heat 20-25mins until soft and mushy
    3. Mix minced garlic, vegan yogurt, tahini, salt, pepper, lemon juice, cumin with mashed zucchini
    4. Store in fridge up to 1 week.
