Inspired by Jamie Oliver's favorite potato dish - a unique "pie" made with roasted potato skins filled with creamy mashed potato filling. Rustic and delicious.

Ingredients you'll need

For the base

  • 5 large potatoes

For the filling

  • 1 large leek
  • 2 tbsp vegan butter
  • 100ml vegan cream
  • Salt and pepper to taste
  • 1 tsp thyme.

For the topping

  • Oil for drizzling
  • Herbs for seasoning
  • Breadcrumbs (optional)

Let's get cookin'

  1. Wash potatoes, poke with fork, bake at 180°C/360°F for 1 hour 15 minutes
  2. Cut in half and scoop out soft potato flesh
  3. Sauté leek in vegan butter until soft
  4. Add scooped potato to leek pan, turn off heat
  5. Mash with vegan cream, salt, pepper, and thyme until creamy
  6. Toss empty potato skins with oil, salt, and herbs
  7. Layer skins in lined baking dish, add mashed potato filling
  8. Optional: top with breadcrumbs
  9. Bake 35 minutes more until golden
