Ingredients you'll need

For the noodles

  • 6-9 sheets rice paper

For the peanut sauce

  • Garlic and ginger to taste
  • 1 heaped tsp peanut butter
  • 1 tsp lime juice
  • 1 tsp soy sauce
  • 1 tsp maple syrup
  • 1 tsp sriracha (optional)
  • Water to thin.

For serving

  • Cucumber
  • Tofu

Let's get cookin'

  1. Stack 3 rice paper sheets at a time
  2. Dip in warm water for 5-10 seconds
  3. Remove air bubbles and cut into desired noodle thickness
  4. Rinse with cold water
  5. Mix all sauce ingredients, using water to achieve desired consistency
