Ingredients you'll need

  • 15 chilies deseeded
  • 5 shallots
  • 5 cloves of garlic
  • a thumbsize piece of ginger
  • 1/4 cup (65ml) water
  • 1/4 cup (65ml) oil
  • 200ml water
  • 3 tbsp sugar
  • juice of 1/2 lime
  • some salt
  • Let's get cookin'

    1. Blend chilies, shallots, garlic, ginger and water until it's a paste
    2. Heat oil and sauté the paste for 5-7mins
    3. Add water, sugar, lime juice and salt
    4. Let it simmer on medium heat for 30mins or until thick and glossy
    5. Store in the fridge up to 4 weeks.
