250g fresh or frozen strawberries
1 cup (200g) sugar
2 cups (500ml) water
1 1/2 cups (325ml) lemon juice
zest of 1-2 lemons
3 cups (750ml) water
lemon and strawberry slices
Preparation
1. Blend strawberries and strain through sieve
2. For syrup: stir sugar and water while bringing to simmer to dissolve sugar
3. Turn down heat, then add syrup to strawberry purée
4. Add lemon juice zest and water
5. Mix everything and place in fridge to cool
6. Serve on ice with lemon and strawberry slices.
