Ingredients you'll need

  • 250g potatoes
  • 250g firm tofu
  • 175g flour
  • salt
  • 1 onion
  • 3 cloves garlic
  • 1 tsp each dried oregano paprika
  • 3 tbsp tomato paste
  • 1 1/3 cup (330g) tomato sauce
  • 1/4 cup (60g) vegan cream
  • Let's get cookin'

    1. Boil potatoes until soft
    2. Mash with tofu
    3. Add flour and salt, knead until dough forms
    4. Cut in 4, roll into logs, cut in pieces
    5. Boil in salted water until they float
    6. For sauce: fry onion and garlic, add oregano, paprika, and tomato paste. Sautée
    7. Add tomato sauce and vegan cream
    8. Toss gnocchi in sauce cook 2-3mins and serve.
