Ingredients you'll need

  • 400g firm tofu
  • 1 tbsp oil
  • 2 tbsp maple syrup
  • 1 tsp harissa spice
  • salt
  • 180g couscous
  • 1/2 cucumber
  • 1 red pepper
  • handful sun dried tomatoes
  • 1 tbsp hummus per jar
  • 1 tsp lemon juice
  • 1 tsp agave
  • 1/2 tsp paprika
  • cilantro
  • Let's get cookin'

    1. Cut tofu in cubes, mix with oil, maple syrup, harissa and salt
    2. Bake at 200C/400F for 20mins
    3. Cook couscous 10mins in salted water
    4. Chop vegetables
    5. For each jar: mix hummus, lemon juice, agave, salt and paprika for dressing
    6. Layer vegetables, tofu, couscous and cilantro
    7. Refrigerate until hungry.
