Ingredients you'll need

For the base

  • 200g pasta
  • 200g smoked tofu
  • 1 small cucumber
  • 120g tomatoes
  • 2 romaine hearts.

For the dressing (per jar)

  • 1 tbsp tahini
  • 1 tsp chopped capers
  • 1/2 tsp mustard
  • 1 tsp maple syrup
  • 2 tsp lemon juice
  • Vegan worcestershire sauce (optional)
  • Salt
  • garlic powder
  • and pepper to taste
  • 1 tsp cashew parmesan
  • 1 tbsp water

  • For serving: Fried onions

Let's get cookin'

  1. Cook pasta in salted water according to package directions and drain
  2. Chop smoked tofu, cucumber, tomatoes, and romaine hearts into small pieces
  3. For dressing: mix tahini, capers, mustard, maple syrup, lemon juice, optional worcestershire sauce, salt, garlic powder, pepper, cashew parmesan, and water in each jar
  4. Layer in jars: pasta on bottom, then smoked tofu, then vegetables
  5. Cover and store in refrigerator for up to 4 days
  6. Serve topped with fried onions
