Ingredients you'll need

  • 1 small cauliflower, cut into quarters
  • Oil for frying
  • 150ml water
  • For the sauce

    • 1 tbsp oil
    • 2 tbsp tomato paste
    • 1 tsp cumin
    • 1 tsp garam masala
    • 1 tsp paprika
    • 1/2 tsp ground coriander
    • 1/2 tsp garlic powder
    • Salt to taste
    • 250g unsweetened coconut yogurt
    • Juice of 1 small lemon
    • Pinch of sugar

    For serving

    • Toasted coconut flakes

    1. Cut cauliflower into quarters and fry in oil on each side until nicely charred.
    2. Add about 150ml water, cover, and cook over medium heat for 10-15 minutes until tender.
    3. For the sauce: Heat oil in a pan and add tomato paste, cumin, garam masala, paprika, ground coriander, garlic powder, and salt.
    4. Add coconut yogurt, lemon juice, and a pinch of sugar.
    5. Mix until creamy and taste for seasoning adjustments.
    6. Serve the tender cauliflower with the creamy sauce and top with toasted coconut flakes.
