Ingredients you'll need

  • 1 broccoli
  • 250g pasta
  • 3 cloves garlic
  • 2 tbsp vegan pesto
  • juice and zest of 1/2 lemon
  • salt and pepper
  • 1/2 cup (125ml) pasta water
  • vegan parmesan
  • Let's get cookin'

    1. Boil broccoli and pasta in salted water, but remove broccoli after 6mins
    2. Fry garlic in oil for one minute, add broccoli and mash until almost purée
    3. Add pesto, lemon juice, lemon zest, salt, pepper and pasta water
    4. Simmer until pasta is cooked
    5. Add pasta and finish cooking in pan 3mins
    6. Serve with vegan parmesan.
