Ingredients you'll need

  • 150g silken tofu
  • 2 tbsp chickpea flour or cornstarch
  • 1 tsp scrambled egg seasoning
  • large handful spinach (optional)
  • 1 large tortilla or 2-3 small tortillas
  • toppings (tomato avocado vegan feta)
  • Let's get cookin'

    1. Blend tofu flour and seasoning until creamy
    2. Fry spinach in oil, add egg mixture
    3. Place tortilla on top and fry 2-3mins
    4. Put egg on tortilla fry 4-5mins more then flip
    5. Add toppings fold and serve.
