Can I turn sandwiches into salads? I love bagels, but eating them can be a mess. So I created the Bagel Salad.

Ingredients you'll need

For the Chuna (Chickpea Tuna):

  • 1 can (220g) cooked chickpeas
  • 1/2 red onion
  • 3 small pickles
  • 1/2 bunch of dill
  • 3 tbsp vegan mayo
  • Juice of half a lemon
  • 1 tsp mustard
  • Salt and pepper to taste

For the Rest:

  • 3 bagels
  • oil for drizzling
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • A handful of roasted onions
  • 1/2 avocado, sliced

Let's get cookin'

  1. Drain and mash the chickpeas. Chop the red onion, pickles, and dill, then add to the chickpeas
  2. Add vegan mayo, lemon juice, mustard, salt, and pepper to the chickpea mixture. Mash again and mix well to create the chuna
  3. Chop the bagels into small pieces and drizzle with oil
  4. Bake the bagel pieces at 200°C for 8-10 minutes
  5. Chop the cucumber and tomatoes. Slice the avocado
  6. Assemble everything in a bowl: chuna, baked bagel pieces, cucumber, tomatoes, roasted onions, and avocado
